 Warm water lobster tails (spiny or rock lobsters) offer a milder, sweeter flavor and a softer, more tender texture compared to cold water varieties. They have a slightly briny, ocean-forward taste and are ideal for bold, seasoned dishes, grilling, or broiling.

Lobster Tail Preparation

1) Thaw the lobster tails

  • Overnight in the refrigerator
  • Or place them in a bowl of cold water for faster thawing

2) Cut the shell

  • Cut the shell down the middle from the wide end to the tail fin.
  • Do not cut into the meat.

3) Open the shell

  • Gently spread the shell apart, exposing the meat.
  • Lift the meat out of the shell, keeping it attached at the tail end.
  • Lay it on top of the shell.

Cooking the Lobster Tail

Baking

  • Preheat oven to 425°F.
  • Place prepared lobster tail on a baking sheet.
  • Bake 12–15 minutes or until the meat is opaque in color.
  • Internal temperature should reach 140°F.

Grilling

  • Preheat grill to medium-high heat.
  • Place the lobster tails meat side down for 5–6 minutes.
  • Flip them over, baste with butter, and grill for another 4–5 minutes until fully cooked.
