Canadian lobster tails also known as the North American or Maine lobster are prized for their firm texture and succulent white meat sourced from the frigid deep waters of the northwest Atlantic these premium cold water tails are denser and more delicate in flavor than warm water varieties. They are ideal for baking, broiling or grilling, and are incredibly easy to prepare.


Lobster Tail Preparation

1) Thaw the lobster tails

  • Overnight in the refrigerator
  • Or place them in a bowl of cold water for faster thawing

2) Cut the shell

  • Cut the shell down the middle from the wide end to the tail fin.
  • Do not cut into the meat.

3) Open the shell

  • Gently spread the shell apart, exposing the meat.
  • Lift the meat out of the shell, keeping it attached at the tail end.
  • Lay it on top of the shell.

Cooking the Lobster Tail

Baking

  • Preheat oven to 425°F.
  • Place prepared lobster tail on a baking sheet.
  • Bake 12–15 minutes or until the meat is opaque in color.
  • Internal temperature should reach 140°F.

Grilling

  • Preheat grill to medium-high heat.
  • Place the lobster tails meat side down for 5–6 minutes.
  • Flip them over, baste with butter, and grill for another 4–5 minutes until fully cooked.
