Australian lobster tails are highly prized for their luxurious, naturally sweet and rich, buttery flavor. They are considered a gourmet delicacy, often found in premium steak and seafood pairings. Australian rock lobsters are an excellent premium option for broiling, grilling, or steaming. To get the best culinary experience, make sure not to overcook the meat so it preserves its natural succulent qualities.

Lobster Tail Preparation

1) Thaw the lobster tails

  • Overnight in the refrigerator
  • Or place them in a bowl of cold water for faster thawing

2) Cut the shell

  • Cut the shell down the middle from the wide end to the tail fin.
  • Do not cut into the meat.

3) Open the shell

  • Gently spread the shell apart, exposing the meat.
  • Lift the meat out of the shell, keeping it attached at the tail end.
  • Lay it on top of the shell.

Cooking the Lobster Tail

Baking

  • Preheat oven to 425°F.
  • Place prepared lobster tail on a baking sheet.
  • Bake 12–15 minutes or until the meat is opaque in color.
  • Internal temperature should reach 140°F.

Grilling

  • Preheat grill to medium-high heat.
  • Place the lobster tails meat side down for 5–6 minutes.
  • Flip them over, baste with butter, and grill for another 4–5 minutes until fully cooked.
